Now that the weather is finally getting warmer and summer is just around the corner, that means corn is finally in season! If like me you prefer it ~off the cob~ be sure to try out this simple, healthy version of Elote! Best paired with a jalapeño marg
Ingredients:
Corn
Lime
Non-fat plain greek yogurt
Trader Joe's Everything But the Elote seasoning
Cotija cheese
Instructions:
Mix however much corn you want with the juice of 1 lime and a few spoonfuls of the greek yogurt.
Add a few shakes of the Elote seasoning and mix.
Top with the cotija crumbles and a bit more Elote seasoning & enjoy.
