grandma's healthy-ish banana bread

When I was younger, my grandma would always have a fresh batch of her banana bread waiting for us when we came to visit. Since then, I've modified her recipe so that it uses all whole wheat flour and less sugar which makes it a perfect treat any time of the day. The end product is light, moist, and impossible to eat only one slice at a time.
Ingredients:
2 eggs
1/4 cup canola oil
1 teaspoon vanilla
1/4 cup + 2 teaspoons skim milk + 1 tsp white vinegar
2 ripe mashed bananas
1 3/4 cup whole wheat flour
1 teaspoon baking soda
3/4 cup sugar
1/2 teaspoon salt
Instructions:
Preheat oven to 350°F.
Combine flour, baking soda, sugar, and salt in a large bowl.
In a measuring cup, mix together the skim milk and vinegar.
In a separate bowl, beat eggs and add canola oil, vanilla, and milk/vinegar mixture. The gently stir in the mashed bananas.
Add the wet ingredients to the large bowl of dry ingredients and stir until moistened.
Pour into a greased loaf pan and bake for 45-60 minutes, depending how undercooked you like it :)
