This is another reason why I love food in bowls! Quinoa bowls are the perfect lunch because they're healthy, filling, and a great way to use up leftovers from the fridge. Also, as a pescatarian, they're a good way to get a balanced meal with lots of protein. You can literally put anything in a quinoa bowl but below are my ultimate favorite ingredients!
Ingredients:
Quinoa (you can make however much you want depending on how much leftovers you want but usually a 1/2 cup makes 2 servings for me)
Halloumi cheese in strips
1/2 an avocado
1 egg
Kale
Mushrooms
Smoked salmon
Instructions:
Cook quinoa according to instructions on packaging.
While it's cooking, prepare your other toppings: add some olive oil to a pan and once hot, sauté the kale and mushrooms to your liking, adding salt and pepper to taste.
In another pan, add just a touch of olive oil and once hot, place the strips of halloumi in the pan. Cook each side for several minutes until browned to your liking.
Empty one of the pans you used earlier and cook the egg to your liking (I like it sunny side up).
Slice the avocado and roll up the smoked salmon.
Once the quinoa is done, add some to a bowl along with your toppings!
