It's true. Try it and you won't be disappointed.
Ingredients:
2 slices of bread (I love anything whole wheat, grainy, seedy, such as Dave's Killer Bread)
2 slices of cheese (can literally be any kind but recently I've been into Whole Foods' honey smoked gouda for my grilled cheeses)
1/2 an avocado
Pesto (check out my recipe for kale almond pesto)
Olive oil for the pan
Instructions:
Heat some olive oil in a pan. Before it gets too hot, dip one of the pieces of bread in the oil to moisten it (this is optional but I like to make sure both pieces of bread are oily!)
While the pan is getting hot, assemble the sandwich on a plate: spread a good layer of pesto on one piece of bread, then top it with the sliced cheese, avocado (in chunks or mashed), and other piece of bread (with the oiled side up).
Place sandwich in heated pan and cook for a few minutes, depending on how browned/crispy you like it.
Flip sandwich & cook the other side.
Remove sandwich from pan and (optional) microwave for ~30 seconds to melt the cheese even more so it's extra gooey!
